Description: Tomme fermiere is a farmer raw cow milk cheese from France's mountainous region of Savoie in the Rhone Alpes. It has been lightly pressed for a semi-soft texture and aged from 2-4 months. Tommes are traditionally lower in fat because, after the collection of milk, the farmers take the cream for butter, leaving the remaining skimmed milk for the cheese. That is why it is low in fat content, about 20-40%. Expect some tang, along with strong wet straw and either vegetal or dried fruit aromas depending on seasonal Alpine grazing conditions.
About the producer: Schmidhauser is an independent family business for 4 generations, starting in Switzerland before moving to Savoie at the beginning of the 20th century. Originally specialized in cheese maturation, they are now cheese producers to ensure the quality of their cheeses and remain independant from industrial producers. Schmidhauser has a large range of raw milk cheeses from savoie region, including the creamy Moelleux du Revard.

Our cheeses can be kept for at least a week from the date of delivery. After opening the initial wrapping paper, we recommend to store the cheeses in a clean, dry cling wrap and store them in the lower compartment of the fridge which is usually not too cold or dry. We recommend to bring your cheeses out from the chiller 15mn before serving to get the full aromas.
