After the cheese is produced, it is exposed to smoke generated from a wood fire highly humid atmosphere. This atmosphere allows the smoke flavor to penetrate into the cheese, giving it a rustic element to its already caramelly and nutty taste. The end result is a semi-soft cheese with an off-white, ivory colored pate and rich brown rind.
This cheese is flavoured with wild garlic (ail des ours)
Serving Tips: Raclette is also the name of a Swiss dish where the cheese is melted in front of a fire or a special machine and the melted parts are scraped onto diner's plates. It is then served with small potatoes, gherkins, pickled onions and air dried meat. We recommend 200 to 250g of Raclette cheese per adult.
Weight: Approx. 200g/ piece. You may ask it to be sliced in the "instructions to seller".
Wine Pairing: It is best paired with Vin de Savoie
Our cheeses can be kept for at least a week from the date of delivery. After opening the initial wrapping paper, we recommend to store the cheeses in a clean, dry cling wrap and store them in the lower compartment of the fridge which is usually not too cold or dry.
