Description: This sheep milk cheese from South West region of France is considered one of Ossau Iraty's cousin. Mild in flavor, its rind is burnt with a blowtorch towards the end of its maturation.
This cheese is called a "tommette" due to its round shape and small size.
It can also be shaved like Tete de Moine cheese, developing subtle aromas.
