Description: Perail is a soft-ripened, flat disc cheese made of sheep's milk in Aveyron in the Midi-Pyrénées region of France. The cheese is specially ripened in wooden moulds as it has the tendency to get quite runny at room temperature. The land on the massif des Causses is rich in floral growth, and this is transmitted to the cheeses. The rind of the cheese is smooth, revealing a pate that is pale yellow, soft and thick. It is creamy and rich with a strong, powerful taste balanced by earthy undertones. The cheese requires a very short maturation period

Wine Pairing: Perail Bergeronette pairs best with white wine like a Pacherin du Vic-Bilh (Gascogne) or a Saint Chinian red wine (Languedoc).
Our cheeses can be kept for at least a week from the date of delivery. After opening the initial wrapping paper, we recommend to store the cheeses in a clean, dry cling wrap and store them in the lower compartment of the fridge which is usually not too cold or dry.
