Description: Mont d'Or or Vacherin du Haut-Doubs is a raw cow's milk cheese from Franche-Comté, France, matured for 21 days. Mont d'Or is highly seasonal. Traditionally made with the winter milk of the same cows that produce Gruyere/ Comté in the summer, this cheese is made between 15 August and 15 March and only available mid-September till April. The AOP requires that the cheese is produced with the milk of only two breeds of cows: Montbéliardes and Simmental. The cheese has a soft, pale brown rind, with deep, wave-like indentations and a yielding texture. Mont d'Or is encircled with spruce bark and packed in a circular spruce box, which both flavours the cheese and gives to the rind a specific appearance of hills. The flavour is rich, a little sweet, with grassy undertones. Mont d'Or can be eaten like a Fondue or on a table cheese.

Wine Pairing: This cheese is best paired with wines such as Beaujolais Nouveau, Côtes du Jura and Champagne.
Our cheeses can be kept for at least a week from the date of delivery. After opening the initial wrapping paper, we recommend to store the cheeses in a clean, dry cling wrap and store them in the lower compartment of the fridge which is usually not too cold or dry.
