Description: Le Fumaison is a raw sheep's milk cheese made in Auvergne. It's an unusually-shaped, gray-dusted, square loaf of cheese striped with rope marks often used for making that is often compared to Jésus de Lyon - the very famous sausage. Its pâte has an ivory color, souple with little holes. Hung like a sausage during, at least 3 months and smoked during this period with pine wood, the Fumaison has a typical smoky taste with some lactic touch.
