Description: This camus de Bretagne is the largest artichoke, with a large ashy-green colour. Its flower head is rounded and tight, with broad, short scales. It is harvested from May to mid-November.
Artichokes are steamed or boiled in salted water and simply served with a homemade vinaigrette. When you get to the heart of the artichoke, remove the hair and fill the cavity with vinaigrette... it's like finding treasure after a long quest ;-)
