Description: Beaufort d'Ete (summer Beaufort) is a raw cow's milk cheese produced at the end of fleeting summers where indigenous cows have feasted on sloping meadows of flowers and grass. Beaufort is richer and creamier than other mountain cheeses such as Gruyere, Comté or Emmental. The cheese is smear-ripened with a mixture called morge which produces its strong flavor and pale yellow rind. Beaufort has a nice scent of milk, butter and honey. The supple paste has flowery and herbs aromas. It goes well with smoked salmon and it is used to make cheese fondue.

Wine Pairing: Beaufort pairs perfectly with white wines like Chablis or Burgundy.
Our cheeses can be kept for at least a week from the date of delivery. After opening the initial wrapping paper, we recommend to store the cheeses in a clean, dry cling wrap and store them in the lower compartment of the fridge which is usually not too cold or dry.
