Description: Palet Cendré is made with whole fresh goat's milk, comes in the shape of a puck. The cheese is sold at a minimum maturing age of 2 weeks but may be matured for five to six weeks to acquire an intense aroma and flavour. The twist on this chevre is the lightly salted ash-coating which gives the cheese a lovely herbaceous aroma.
Serving Tips: Cut the cheese and it reveals a firm, creamy interior but not before unwinding a thin buttery layer. Even though it smells typically "goaty", the flavours are sweet with a bit of salty and tangy edge at the end. As the cheese ages, it becomes savory, piquant and nutty.

Our cheeses can be kept for at least a week from the date of delivery. After opening the initial wrapping paper, we recommend to store the cheeses in a clean, dry cling wrap and store them in the lower compartment of the fridge which is usually not too cold or dry.
