Description: Persillé de Chèvre is an original farmhouse blue cheese, produced by Ferme de la Tremblaye farm. It has the creamy and fatty texture of a Fourme, as well as the same intense flavor, but with aroma of goat cheese, while still be considered a mild blue cheese. It is veined with blue or green mold in a uniform manner. The cheese has a sweet cream undertone with notes of earth and salt. Its rind is coated with a vegetable ash.
About the producer: Located on the edge of the forest of Rambouillet, La Ferme de La Tremblaye dates back to the XIX century. At first, they were farming cereals and livestock, then in the 70s, they started producing cow's milk and cheese.The cheese is a traditional farmhouse cheese produced locally from the milk of the alpine goats according to the traditional methods. Fruit of an artisan’s work, the curd of the blue-veined cheese is sliced and mixed by hand, then molded and turned by hand in cellars. Persille de Chevre has received World Cheese Bronze Award in 2022-2023.

Our cheeses can be kept for at least a week from the date of delivery. After opening the initial wrapping paper, we recommend to store the cheeses in a clean, dry cling wrap and store them in the lower compartment of the fridge which is usually not too cold or dry. We recommend to bring your cheeses out from the chiller 15mn before serving to get the full aromas.
